Questions

Why does "Café" become "cafe"?

Accented Latin letters are turned into plain ones (é to e, ñ to n, ü to u), so the slug works everywhere without encoding.

What happens with Japanese or Arabic text?

It's kept as it is. There's no good letter-by-letter way to turn these scripts into ASCII, and dropping them would leave an empty slug. Browsers show them correctly in the address bar.

How are punctuation and spaces handled?

Any run of characters that aren't letters or numbers becomes one hyphen, and hyphens at the start or end are removed. "Hello, World!!" becomes "hello-world".

Can I use underscores instead of hyphens?

Yes. Tick "Use underscores". Hyphens are the default because they're more common in URLs.
